09. WHEAT NOODLES & CREAMY MUSHROOM

I apologize for being back a little late this time.  But I hope the nice recipe I am sharing here will make up for it.

Today we are going to see how to make wheat noodles with creamy mushroom. We are going to make wheat noodles from scratch and not buy the premade ones from any store. It is always worth taking the extra steps to make your food as healthy as you can. Plus wheat is such an healthier alternative to maida. Always choose your health over anything!



Make sure to buy fresh mushrooms for this recipe. And I think it is always better to blanch the mushrooms (few minutes in boiling water followed by a wash with cold water) before you start doing the actual cooking. This is to make sure the mushrooms are fully clean. You could choose to skip this if you are very sure of the place where your local shops source the mushrooms from.

Let us move on to the ingredients and the method as usual.

INGREDIENTS:

For the creamy mushroom base
01. Fresh Mushrooms (2 cups)
02. Fresh cream (1/2 cup)
03. Onion (2 medium sized; chopped)
04. Garlic (7-8 cloves)
05. Spring onion (5-6 leaves; chopped)
06. Black pepper powder (1 tbsp.)
07. Turmeric powder (2 tsp.)
08. Amchur (1 tsp.)
09. Red chilly powder (2 tbsp.)
10. Thyme (1 tsp.)
11. Salt (as per taste)
12. Wheat flour (1 tbsp.)
13. Butter (2 tbsp.)
14. Coconut oil (2 tbsp.)


For the wheat noodles
01. Wheat flour/Atta (2 cups)
02. Water (1 cup)
03. Salt (2 tsp.)
04. Oil (1-2tsp.)

METHOD:

Wheat Noodle Preparation

01. Mix the wheat flour and salt. Add water to this gradually while you start kneading this mixture just like you would do to make roti. 

02. At the end take 1-2 tsp oil in your hand and knead well. The dough should be smooth and non-sticky. Let the dough rest for 15 mins. Cover it with a cloth.

03. Take 3-4 cups of water in a pot and let it boil. While it boils start making arrangements for the noodle. Once it boils it should be brought down to medium heat.

04. Now take a noodle making machine (the one I am using is the one many South Indians use; for example Keralites make idiyappam with it). You put some dough in it and start rotating the top in such a way that the dough starts coming out from the bottom in noodle/string shape.

05. Let noodle form the noodle maker fall straight into the boiling water. Let the noodles cook in medium heat for 10 mins.


                                                



06.  After the noodles are cooked take them out of the boiling water and transfer them to a bowl of chilled water. Let the noodles rest there until you start cooking with them.


                





Creamy Mushroom Base Preparation

01. Prepare the mushrooms by washing them thoroughly and blanch them (in boiling water for 5-7 minutes, then a quick wash in cold/room temperature water). After the mushrooms cool down chop them into smaller sizes as you prefer.

02. Take a pan and heat some oil. Sauté the onions and spring onions for 10 minutes. Add turmeric powder along with a  pinch of amchur powder and stir well before taking them out of the pan . Keep it aside. 

                                           

                                  
                         
03. Onto the same pan add butter. As the butter starts melting add the mushrooms and black pepper powder. Let it cook on medium heat for 5 mins.

                                                         
       



04. Add the red chilly powder and garlic onto the mushrooms. Cook them for 10 minutes.



                                                      
       


05. As the mushroom starts softening, add the fresh cream and 1 tbsp. of wheat flour into the fresh cream. This gives it a Béchamel (white sauce) sauce kind of taste. Cook for 5 mins on low heat.
 
                                                       
        

   

06. Add 2 cups of hot water onto it. Mix well. Let it cook for another 5 mins.

                                                          
     


07. Add the already cooked onion-spring onion mixture onto it. Combine well. Add salt as per taste and let it cook for 10 mins on low heat. Add a tsp of thyme.

                                       
      


08. Now add the premade noodles straight out of cold water onto this pan. Remember to strain the water well out of the noodle before adding them onto the mushroom-cream base. Let it cook for 2-3 minutes.
 
                             
     


09. Switch off the flame. Serve hot. You could garnish it with coriander leaves to make it look prettier. I did not here.
