07. SHEER KHURMA (THIN VERMICELLI PUDDING WITH DATES)

 Hello:)

This time I am here with a festival sweet dish called Sheer Khurma/Khorma. It originated in Hyderabad and is a commonly made dessert during Eid. 


Sheer means milk and Khurma means dates. So, these are the two main ingredients for this recipe. This kheer/pudding has a very pleasant sweet taste , not an intense one. The texture is also thin and watery unlike a typical South Indian payasam (kheer). 

Let's move on to the ingredients and the method.

INGREDIENTS:

01. Thin Vermicelli  (1 cup diced)
02. Dates (cut, deseeded 7-8)
03. Almond (slivered, 8-9)
04. Dry raisins (10-12)
05. Pistachios (cut, 8-9)
06. Milk (1 litre)
07. Cardamom powder (1tsp.)
08. Saffron strands (4-5)
09. Sugar (1/2 cup)
10. Ghee (5 tbsp.)


METHOD:

01.  Take a pan and heat 4 tbsp. of ghee. Roast the almonds, pistachios, dry raisins and dates for 5 mins. Keep them aside.

                                                 


02. Onto the same pan add 1 more tbsp. of ghee and fry the thin vermicelli till it you see brown colour. Remove the fried vermicelli from the pan and keep it aside.
 
                                                           

                                                           

03. Again on the same pan, add the milk and let it be on medium heat for 5 mins. Add the saffron strands, cardamom powder, sugar and dates. Let the milk boil for another 10-15 mins.

                                                           


04. Add the fried vermicelli and let it be on medium heat for 10 mins. 

                                                            


05. You will notice a light yellow colour because of the ghee. At this point switch off the heat and add the roasted dry fruits (almond, pistachios and dry raisins). 


                                                    


06. Serve hot or cold as you prefer.
