05. PANEER STIR FRIED (INDIAN COTTAGE CHEESE STIR FRIED)

I am back quicker this time to make up for not being able to post last week.
This time let us look at a recipe that uses most Indian's favourite form of cheese, the Indian cottage cheese called Paneer. They are easily available in all supermarkets near you, or if you prefer it can be even made at home, although the process is a little tedious. I chose to pick paneer from the supermarket near me. Maybe one day I will make paneer at home. But that's not going to be in the recent future.
Paneer is basically milk curdled with lemon. For a vegan option the animal milk can be replaced by almond/soy milk. Paneer made from soymilk is same as Tofu. Tofu is also now available in Indian supermarkets. This recipe works well with Tofu as well.
Paneer stir fry is such a easy and quick recipe. It goes well with rice/roti/naan.
INGREDIENTS:
01. Paneer (1 cup diced; after soaking in warm water for 20 mins)
02. Onion (1 cup sliced)
03. Green chilies (2-3, cut)
04. Spring onions (half cup, chopped)
05. Garlic (4-5 pods, cut )
06. Coriander leaves)
07. Black pepper (1 tbsp.)
08. Red chilly powder (2 tbsp.)
09. Turmeric powder (1/2 tbsp.)
10. Cumin powder (1/2 tbsp.)
11. Coriander powder (1 tbsp.)
12. Salt (as per taste)
METHOD:
01. Soak the paneer in warm water for around 15-20 mins in case the paneer has been store brought and taken out of refrigerator. This helps in softening of the paneer.
02. Cut the paneer into small cubes. Add all the spices like black pepper, red chilly powder, turmeric powder, cumin powder, coriander powder and a pinch of salt. Mix it well and keep it aside. Let it rest for at least 20 mins.
03. Put some oil in a pan. Fry the garlic, onion and green chilies.
04. Add the onions and spring onions, sauté it well. Let it cook on medium heat for 5 mins.
05. Add the paneer that has been cut into cubes and pre marinated with all the spices and salt . Let everything cook on medium heat for another 15 mins. Add salt as you prefer.
06. Be cautious about not overcooking the paneer because this could result in rubbery textured paneer. The end result should be soft.
07. After 15 mins, switch off the heat, garnish with coriander leaves and serve hot with rice or roti/chapati/naan.
