04. SOOJI HALWA (SEMOLINA SWEET DISH)

 Hello :)



This time lets us try yet another simple dessert with ingredients that are easily found in most Indian households. This is a sooji/rawa/semolina halwa, a sweet dish typically made with lots of ghee(clarified butter) topped with roasted dry fruits. It is always healthier to have it in limited quantities after lunch.

We move onto the ingredients and the method.


INGREDIENTS:

01. Semolina/Sooji (1 cups)
02. Water (3 cups)
03. Sugar (1.5 cup)
04. Cardamom powder (1 tbsp)
05. Saffron (10 strands)
06. Ghee (1 cup)
07. Dry fruits- Almond, cashew, raisins (slivered; a handful each)
08. Coconut pieces (1 tbsp)

METHOD:

01. Take a pan and dry roast the semolina on medium heat for 10 minutes until it turns slightly brown.
Keep the roasted semolina aside.

02. Take a pan and put half a cup of ghee and roast the dry fruits and coconut pieces for around 5 mins. Remove from the pan & keep it aside.






03. Add the rest of the ghee into the pan. Then add the roasted semolina to it it. Mix well on medium heat for 10 minutes.
                       
                                                            


04.  While the roasted semolina and ghee mixture is on stove, take a sauce pan and mix the water, sugar , cardamom powder and the saffron strands. Turn off the heat when the liquid starts boiling.

                                                            


05.  After the semolina and ghee is well combined and has been cooked for around 10-15 minutes, add the sugar water prepared in the previous step. Do not add it all at once, add the sugar water little by little while mixing.

                                                          


06. As you add water , you will see that the semolina starts to get thick. Heat it until it starts looking like a loose , well combined,  pudding like mixture.

                                                           


07.  After you see the desired consistency in the mixture, add the roasted dry fruits and coconut pieces.

                                    


08. Serve hot or after it cools down; as per your preference.
