This is my first recipe on my blog. This dish is a specialty of Kerala where plantains are eaten in various forms. I personally love plantains, both raw and ripe.
The skin or the peel of raw plantains are a good source of fiber and potassium. One of the many things that the COVID 19 pandemic has taught us is to eat simple, locally available and home made food. And plantains are very much a part of our Indian culture, especially South Indian and they are grown in various places across India.
This is a very uncomplicated and tasty recipe. Let's move on to the ingredients and the method.
INGREDIENTS:
01. Three Raw Plantain's skin (wash the plantains well, remove the skin and cut them into small pieces)
02. Patience to finish the step 01 :D
03. One onion diced
04. Dried red chilies 02
05. Curry leaves
06. Garlic 4-5 pods (diced into small pieces or whole if you prefer)
07. Asafoetida/Hing powder
08. Turmeric powder
09. Red chilly powder
10. Black pepper powder
11. Jeera powder
12. Salt (as per taste)
13. Coconut oil (or any other cooking oil, best made in coconut oil)
METHOD:
01. Pour in some coconut oil onto a pan. When the oil heatens up, add some hing powder , jeera powder, curry leaves and the dried red chilies.
02. After a minute or two, add the garlic and the diced onions. When the onions become slightly translucent, add the turmeric powder .

03. Then you let it cook for 2-3 minutes, and the raw plantain skins. It will start to look something like the picture below
04. After about 2-3 minutes, add the red chili powder , black pepper powder and salt (as required).
05. Let it cook for another 10-15 minutes. We are aiming for a stage where the plantain becomes soft and looses it original bitter taste. So, cook it until you are satisfied with the taste and the look.
The final picture looks something like below. Best had with some rice :)
